A three-course celebration of British beef and its perfect companions
To Start
Smoked Beef Carpaccio - thin slices of rare beef, gently kissed with cherry wood and thyme smoke, with rocket, shaved parmesan, pickled shallots & truffle oil
OR
Smoked Beetroot Carpaccio - roasted beetroot, lightly smoked, with whipped goat's cheese, toasted hazelnuts & pickled shallots (vegetarian option)
Main Event
Pressed Beef Shin - slow-braised boneless shin, set and glazed with rich red wine jus, served over a silky parsnip purée
OR
Braised King Oyster Mushrooms - slow-cooked in mushroom consommé, thyme & red wine until meaty and tender, served over a silky parsnip purée (vegetarian option)
Sides
Pommes Boulangère - layered Agria potatoes with caramelised onions, stock & thyme, baked golden and crisp
Roasted Heritage Carrots - with honey & caraway
Seasonal Greens - buttered hispi cabbage with garlic & lemon zest

Lemon Posset with Spiced Shortbread - light, sharp and creamy, a perfect balance to the richness before

Beef Consommé Brioche - soft brioche rolls enriched with beef consommé, served warm with whipped beef dripping butter

Mushroom Consommé Brioche - for vegetarians, with whipped smoked sea salt butter

All the same courses, sides and dessert with half the protein portion (pressed beef shin or braised mushrooms) and a single brioche roll.

A classic Rioja Reserva ripe red fruits, oak, vanilla and spice, with supple tannins. Beautifully complements slow-braised beef shin or rich mushrooms.
Dr Loosen Riesling Beerenauslese (Mosel, Germany)
A highly rated dessert wine with notes of honey, apricot and lime zest. Its luscious sweetness and bright acidity balance lemon posset perfectly.
